MEAT AND 2 VEG, NOT In downtown Cuenca ,Ecuador, the evening was mild with a slight drizzle in the air. As the Tranvia rolled by ,we pressed the door buzzer to gain entry into a world I have had no interest in the past to explore. Through the glass door, we saw a tall, well-built man who opened the door and greeted us with some dry wit and a soft voice. In this reception area, we gathered for small talk which gave no clue as to what would follow. We were the first to arrive of a group of 10. This gave us time to explore the space. As the other members of the group arrived a short time later, this short time was given to break the ice in both English and Spanish. As we were seated, the table became divided into one-half that spoke English and the other half that spoke Spanish. This in my mind was an error for the social intercourse over the course of the experience. At this point, we were seated and introduced to the core values and motivators of the experience; for those new to vegan food, what to expect. I have allowed my prejudice in the past to reject this form of food to be that of a fad. So, for now I have let go and I am open to what may come. Before each course, the chefs responsible for the food gave a commentary as to how, why, and what to expect from the offering. As we progressed through the courses, conversation became part of the experience unlike in other restaurants where you are isolated by the area taken up by your table. The team at this restaurant have not only gone back to “dinner is not just about the food,” they have expanded on this by providing enough time to enjoy the food and the diversity of people at the table. Final thoughts: if you are like me,you think that vegan is a fad. Then you would be in for an introduction to a world of flavor that will convert your taste buds, if not your bias. After the apprehensive thoughts that I will not get enough food or it is boring, I was loving the experience; and the knowledge and commitment to the food the team displayed. For a virgin to vegan food or a person who is a vegetarian, this is indeed an Oasis of culinary excellence.

I recommend this to anyone who loves great food and is not in a rush. The entire experience took about 3 hours.
